The old style of machines have a fixed hinge. This restricts us to only adding a certain amount of filling otherwise we are pretty much guaranteed that our sandwiches will burst. This is because the top plate will close down onto your toastie, regardless of its thickness.

Another improvement that newer models offer is their high quality non-stick hot plates. Back in the day, we had to add oil or butter to the outside of our toastie to prevent it sticking to the sandwich maker. This made for a great tasting snack but not quite as healthy as it could have been. The newer machines deal with this issue easily. We no longer have to add any extra fats to our sandwiches, unless we choose to do so ourselves.

Finally, the look of the panini that we are able to create these days is really attractive. This comes from the ribbed hot plates. They give us the beautiful grill markings on our sandwiches to give them a true café bought vibe.
