If you have ever tried to carve a joint of meat with an ordinary carving knife, you have no doubt noticed that it is a difficult task to get right without a very sharp carving knife and a very steady hand. If you manage to cut thin, even slices from your joint, you are doing very well. If you use an electric carving knife, you have a much easier task, as it does most of the work for you.
